Dishes such as this have been a favorite of Hawaiians since World War II.

Pineapple Spam

1 12-ounce can Spam, cubed

1 cup pineapple, cubed

½ cup soy sauce

Sliced ginger root to taste

1 cup brown sugar

½ cup pineapple juice

In a saucepan, combine the cubed Spam, pineapple, soy sauce, ginger, brown sugar and pineapple juice. Bring to a boil then reduce heat to simmer and heat through.

Yield: Serves 4.

Approximate nutritional analysis per serving: 480 calories, 26 grams fat (9 grams saturated), 2,905 milligrams sodium, 50 grams carbohydrates, 51 milligrams calcium, 13 grams protein, 53 milligrams cholesterol, 1 gram dietary fiber.
