CHEF JEFF — ONE BYTE AT A TIME: Lemon Basmati Rice

This would go well with any stir-fry dish.

Lemon Basmati Rice

1 tablespoon canola oil

½ cup basmati rice

2 tablespoons fresh lemon juice

¼-inch piece fresh ginger

1 cup fat-free, low-reduced-sodium chicken broth

1 cup frozen peas

Salt and fresh ground black pepper

Heat oil in a small, nonstick skillet over medium heat. Add rice and stir 1 minute. Add lemon juice, ginger and chicken broth. Bring to a boil, cover and simmer 10 minutes. Add peas, cover and cook 5 minutes. Remove ginger, add salt and pepper to taste and serve.

Yield: Serves.

Approximate nutritional analysis per serving: 313 calories, 7 grams fat (no saturated), no cholesterol, 9 grams protein, 54 grams carbohydrates, 6 grams fiber, 323 milligrams sodium, 5 grams sugars.
