Simple maple syrup-brown sugar-Dijon mustard sauce works great with meat.

Sauteed Pork Chops

2 tablespoons maple syrup

2 tablespoons brown sugar

2 tablespoons Dijon mustard

Vegetable oil spray

2 6-ounce boneless, butterflied pork chops

Salt and freshly ground black pepper

Mix maple syrup, brown sugar, mustard together. Set aside. Remove visible fat from pork. Heat small nonstick skillet over medium-high heat. Spray with vegetable oil. Brown pork 2 minutes, turn, salt, pepper cooked side. Brown other side 2 minutes. Lower heat to medium, cover, cook 2 minutes or until pork is cooked through. Remove to plate. Add sauce to skillet. Heat several seconds, scraping up brown bits in skillet. Serve pork with sauce.

Yield: Serves 2.
