This old favorite sports a Hawaiian twist.

Quick Banana Bread

2¾ cups flour

1 teaspoon baking soda

2 cups sugar

1 cup chopped walnuts

1 cup oil

1 8-ounce can crushed pineapple, undrained

1 teaspoon vanilla

½ cup coconut

2 ripe bananas, mashed

3 eggs

Mix all ingredients together. Grease and flour 1 large (9-by-5-inch) plus 2 small loaf pans. Bake in oven heated to 350 degrees for about 1 hour, until bread tests done.

Yield: Serves 24.

Approximate nutritional analysis per serving: 255 calories, 47 percent of calories from fat, 13.6 grams fat, (2 grams saturated, 2.3 grams monounsaturated), 24 milligrams cholesterol, 3.2 grams protein, 31.5 grams carbohydrates, 1 gram fiber, 62 milligrams sodium.
