Southwestern Sausage Biscuits
1 pound sausage
1 cup chopped green onions
3 cups all-purpose baking mix (such as Bisquick)
1 cup milk
1¼ cups shredded sharp Cheddar cheese
¼ teaspoon paprika
1 cup seeded, diced fresh or drained canned tomatoes
1 dash cayenne
Butter (optional)
Heat oven to 350 degrees. Crumble, cook meat in skillet until browned. Drain on paper towels. Combine with remaining ingredients except butter in bowl; mix well. Shape into 2-inch balls; place on ungreased baking sheet. Bake 12 minutes or until golden. Serve hot with butter, if desired. Refrigerate leftovers.
Yield: About 2 dozen biscuits.
