A slice of tasty bread such as this goes nicely with a bowl of hot soup.

Garlic Country Toast

2 teaspoons olive oil

2 large slices whole-grain country bread

1 garlic clove, cut in half

Spread oil over bread and rub cut edge of garlic on top. Place under a broiler or in a toaster oven for several minutes or until bread is golden.

Yield: Serves 2.

Approximate nutritional analysis per serving: 111 calories, 46 percent of calories from fat, 5.6 grams fat (0.9 grams saturated, 3.5 grams monounsaturated), no cholesterol, 3.6 grams protein, 11.8 grams carbohydrates, 2 grams fiber, 110 milligram sodium.
