This delicious side dish would go well with a number of entrees.

Brown Rice Pilaf

2 teaspoons olive oil

2 cloves garlic, minced

1 14.5-ounce can reduced-sodium chicken broth

1ΒΌ cups water

1 cup brown rice

Salt and pepper, to taste

1 tablespoon minced fresh flat-leaf (Italian) parsley

2 teaspoons minced fresh rosemary

Heat oil in medium saucepan over medium-high heat. Add garlic. Cook 30 to 60 seconds, stirring frequently. Add broth, water. Heat to a boil. Stir in rice, salt, pepper. Reduce heat to low, cover and cook 40 minutes. Stir in herbs. Cover, cook 10 minutes or until water is absorbed, rice is tender. Spoon into a deep platter.

Yield: Serves 4.

Approximate nutritional analysis per serving: 207 calories, 5 grams fat (1 gram saturated), no cholesterol, 38 grams carbohydrates, 8 grams protein, 19 milligrams sodium, 1 gram dietary fiber.
