These goodies are super easy to make.
Peanut Butter Cookies
1 cup vegetable shortening
1 cup smooth peanut butter
1 teaspoon vanilla extract
1 cup granulated sugar
1 cup firmly packed brown sugar
2 large eggs
3 cups all-purpose flour
2 teaspoon baking soda
½ teaspoon salt
Preheat oven to 350 degrees. In a large bowl, beat together the shortening, peanut butter, vanilla extract, granulated sugar, brown sugar and eggs.
Sift together flour, baking soda and salt. Add dry ingredients to peanut butter mixture and beat until thoroughly mixed.
Form dough with your hands to make a smooth mass. Pinch off enough dough to make 1-inch balls and place about 2 inches apart on cookie sheets. Press each dough ball with a fork to make a crisscross pattern.
Bake for 10 minutes, until lightly colored. Remove from pan onto cooling racks.
Yield: 48 cookies.
Approximate nutritional value per cookie: 135 calories, 7 grams fat (1.5 grams saturated), 10 milligrams cholesterol, 2 grams protein, 16 grams carbohydrates, 9 grams sugar, 0.5 grams fiber, 105 milligrams sodium, 10 milligrams calcium.
