Hot Broccoli Dip
1 cup broccoli florets, chopped
2 tablespoons chopped onion
2 tablespoons chopped red bell pepper
1 cup (4 ounces) shredded Cheddar cheese
½ cup light mayonnaise
½ cup light sour cream
¼ cup (1 ounce) grated fresh Parmesan cheese, divided
1 garlic clove, pressed
1/8 teaspoon coarsely ground pepper
Heat oven to 375 degrees. In medium bowl, combine broccoli, onion, bell pepper. Add Cheddar, mayonnaise, sour cream, 2 tablespoons of Parmesan, garlic, pepper. Mix well. Spoon into 2- to 3-cup ovenproof dish. Bake 25 minutes or until heated through. Remove from oven; sprinkle with remaining Parmesan. Serve with crackers or raw vegetables.
Yield: 2 cups (serves 16).
Approximate nutritional analysis per serving: 70 calories, 6 grams fat, 15 milligrams cholesterol, 2 grams carbohydrate, 3 grams protein, 135 milligrams sodium, no fiber.
