Give this classic New Orleans dish a try.

Shrimp Creole

1 tablespoon canola oil

1 cup onion, sliced

1 cup green pepper, sliced

2 medium cloves garlic, crushed

2 cups diced tomatoes

½ tablespoon tomato paste

2 tablespoon water

½ tablespoon Worcestershire sauce

1 teaspoon hot pepper sauce

¾ pound medium shrimp, shelled and deveined

Heat oil in nonstick skillet over medium-high heat. Add onion, green pepper, garlic. Saute for 3 minutes. Add tomatoes. Saute another 5 minutes. Mix tomato paste with water. Add to skillet with Worcestershire, pepper sauce. Cook 1 minute. Add shrimp. Saute 2 to 3 minutes. To Spoon shrimp, sauce over rice.

Yield: Serves 4.

Approximate nutritional analysis per serving: 277 calories, 9 grams fat (no saturated) 261 milligrams cholesterol, 385 milligrams sodium, 19 grams carbohydrates, 4 grams dietary fiber, 11 grams sugars, 31 grams protein.
