This easy, make-ahead side dish can save a cook some valuable time during the holidays.

Beet Salad

2 15-ounce cans small whole beets

2 cups chopped celery

½ cup mayonnaise-style salad dressing

4 teaspoons ground horseradish

Drain and coarsely chop beets. Do not rinse. Place in large salad bowl. Add celery, dressing and horseradish. Mix together.

Refrigerate several hours before serving.

Yield: Serves 8 to 10.
