CHEF JEFF — ONE BYTE AT A TIME: Linguine and French Green Beans

This tasty side dish would go well with just about any kind of meat.

This tasty side dish would go well with just about any kind of meat.

Linguine and French Green Beans

¼ pound whole wheat linguine

½ pound washed and trimmed green beans and cut in half (about 1 cup)

2 teaspoons olive oil

Salt and freshly ground pepper

Place a large saucepan with 3 to 4 quarts water on to boil over high heat. Add linguine and beans. Boil 3 minutes if fresh linguine. If using dried linguine, boil 6 minutes, add beans, and continue to boil 3 minutes. Drain, leaving about 2 tablespoons water on pasta. Add oil, and salt and pepper to taste. Toss well.

Yield: Serves 2.

Approximate nutritional analysis per serving: 285 calories, 17 percent of calories from fat), 5.5 grams fat (0.8 grams saturated, 3.4 grams monounsaturated), no cholesterol, 9.4 grams protein, 50.4 grams carbohydrates, 5.5 grams fiber, 10 milligrams sodium.
