Can you think of a better condiment than this for a nice steak or prime rib?

Fresh Horseradish Sauce

ΒΌ cup freshly grated horseradish

2 to 3 teaspoons white wine vinegar

Pinch of salt and pepper

Pinch of sugar

1 cup freshly whipped cream, creme fraiche, sour cream or plain whole-milk yogurt

Combine the horseradish with vinegar, salt, pepper and sugar. Fold in the whipped cream.

Note: This sauce will keep two to three days in the refrigerator.

Yield: About 1 cup.

Approximate nutritional analysis per 2 tablespoons: 49 calories, 5 grams fat (3 grams saturated), 47 milligrams sodium, 2 grams carbohydrates, 15 milligrams calcium, no protein, 17 milligrams cholesterol, no dietary fiber.
