CHEF JEFF — ONE BYTE AT A TIME: Roasted Broccoli with Garlic and Hot Pepper

This would make a tasty side at any holiday gathering.

Roasted Broccoli with Garlic and Hot Pepper

1¼ pounds broccoli florets

3 tablespoons plus ½ tablespoon olive oil

2 garlic cloves, minced

Large pinch of dried crushed red pepper

Salt, freshly ground pepper

Lemon juice or cider vinegar

Preheat oven to 450 degrees. Put broccoli, 3 tablespoons oil in bowl. Toss to coat. Spread broccoli on rimmed baking sheet, making sure florets don’t touch. Roast 15 minutes. Stir remaining oil, garlic, red pepper in bowl. Drizzle garlic mixture over broccoli, tossing to coat. Return broccoli to oven. Roast until it begins to brown, crispen. Season to taste with salt, pepper, sprinkle of lemon juice.

Note: Cauliflower can be substituted. Roasting vegetables makes them mellow, nutty.

Yield: Serves 6.

Approximate nutritional analysis per serving: 103 calories, 8 grams fat (1 gram saturated), 32 milligrams sodium, 7 grams carbohydrates, calcium, 3 grams protein, no cholesterol, 2 grams dietary fiber.
