Apple Fritters

Vegetable oil for frying

1 cup unbleached all-purpose flour

¼ cup sugar

½ teaspoon ground cinnamon

Pinch salt

1 cup lager-style beer, chilled

2 large apples, peeled, cored, and cut into 16 ¼-inch slices

Honey for drizzling

Heat an inch of vegetable oil over medium-high heat in Dutch oven. Line baking sheet with paper towels. Whisk flour, sugar, cinnamon, salt, beer together in mixing bowl.

Put 8 of the apple slices in bowl. Toss to coat with batter. Lift out with a slotted spoon, one at a time, from bowl, letting any excess batter drip back into bowl, and put them in hot oil.

Fry slices, turning once, until golden brown on both sides. Use clean slotted spoon to transfer slices to the baking sheet to drain. Repeat with remaining slices. Let fried apples rest on baking sheet for minute or two, transfer to a platter, drizzle with honey and serve.

Yield: Serve 6 to 8.
