A honey and cider vinegar dressing balances the bite of greens in this simple salad.

Spinach and Apple Salad

¼ cup olive oil

1 tablespoon plus

2 teaspoons cider vinegar

1 tablespoon honey

½ teaspoon finely chopped fresh thyme leaves

¼ teaspoon salt

1 5-ounce box baby spinach

One Granny Smith apple, cored and sliced into matchsticks

Whisk together oil, vinegar, honey, thyme and salt in a small bowl.

Combine spinach and apples in a large salad bowl, toss with dressing, and serve.

Yield: Serves 8.
