Here’s a switch from serving hot dogs and hamburgers at a cookout.

Grilled Turkey Sausage

4 low-fat turkey sausages

1 teaspoon olive oil

1 cup sliced red onion

1 cup sliced bell pepper

1 cup diced tomato

1 teaspoon minced garlic

Salt and freshly ground black pepper

4 whole wheat hot dog buns

Preheat grill. Spray with vegetable oil spray. Grill sausages 6 to 7 minutes, turning to make sure all sides are cooked. While they cook, heat oil in nonstick skillet over medium heat. Add onion, bell pepper, tomato, garlic. Cover with lid and cook 5 minutes. Add salt, pepper to taste. Open hot dog buns, toast on grill for 2 minutes. Serve sausages on buns; spoon vegetables on top.

Yield: Serves 2.

Approximate nutritional anlaysis per serving: 563 calories, 20.6 grams fat (4.6 grams saturated), 126 milligrams cholesterol, 45 grams protein, 49 grams carbohydrates, 9 grams fiber, 1,416 milligrams sodium.
