This recipe is from San Francisco writer Shannon O’Malley’s new tongue-in-cheek cookbook, “Apocalypse Cakes: Recipes for the End” (Running Press, 128 pages, $14).
Economic Collapse Crumb Cake
1 cup sugar
1½ cups flour
¼ pound unsalted butter, cut into pieces
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 teaspoon baking soda
Pinch salt
1 cup buttermilk
1 egg, lightly beaten
Preheat oven to 350 degrees. Lightly grease 11-by-7-inch baking pan.
Combine sugar and flour in a bowl. Use a fork to cut butter in, until the mixture resembles coarse crumbs. Set aside ½ cup of this mixture to use as a topping.
To the remaining flour mixture, add spices, baking soda and salt. Stir in buttermilk and egg. Pour into prepared pan. Sprinkle with reserved topping. Bake 25 minutes, or until toothpick inserted in center comes out clean.
