CHEF JEFF — ONE BYTE AT A TIME: Green Goddess

This salad dressing has just the right balance of tart and mellow tastes.

Green Goddess

Scant ½ cup coarsely chopped fresh parsley

1 cup chopped basil

½ cup chopped fresh chives

½ pound fresh spinach leaves

1 tablespoon apple cider vinegar, more to taste

3 cups mayonnaise

2¼ teaspoons Dijon mustard, more to taste

1 teaspoon salt, more to taste

¾ teaspoon white pepper, more to taste

¾ teaspoon fresh lemon juice, more to taste

In blender, pulse together parsley, basil, chives, spinach with cider vinegar. Remove to large bowl. Whisk in mayonnaise, mustard, salt, pepper, lemon juice. Taste, adjust flavorings, seasonings. This will keep, covered, refrigerated, up to 1 week.

Yield: A generous 3 cups.

Approximate nutritional analysis per tablespoon: 90 calories, no protein, 1 gram carbohydrates, no fiber, 10 grams fat, 7 milligrams cholesterol, no sugar, 122 milligrams sodium.
