Here’s a good recipe for those leftovers from the supermarket deli.

Ginger-Curry Chicken Lettuce Wraps

½ teaspoon kosher salt

½ teaspoon freshly ground pepper

½ cup Asian ginger dressing (found in the produce section)

1½ teaspoons curry powder

2 cups cooked chicken, shredded

1 cup coleslaw mix

1 Granny Smith or other tart apple, sliced thinly

3 scallions, sliced thinly

Zc cup sweetened, flaked coconut, toasted

12 large, soft lettuce leaves such as Bibb or Boston

In large bowl, mix salt, pepper, dressing, curry powder. Add remaining ingredients except lettuce. Toss gently. Place 2 lettuce leaves on each plate, fill each with small amount of chicken mixture and serve.

Yield: Serves 6.

Approximate nutritional analysis per serving: 220 calories, 8 grams fat (3.5 grams saturated), 18 grams carbohydrates, 3 grams fiber, 20 grams protein.
