Hardly anything can beat small spuds right out of the garden.

Sauteed New Potatoes

¾ pound new potatoes

1 tablespoon olive oil

1 teaspoon minced garlic

4 cups washed, ready-to-eat spinach

Salt and freshly ground black pepper

Wash potatoes, do not peel. Place in microwave-safe bowl. Microwave on high 5 minutes. Heat oil in medium skillet over medium-high heat. Add garlic, spinach. Cook spinach 1 minute or until it just starts to wilt. Remove and divide between 2 dinner plates. Add microwaved potatoes to skillet. Saute 5 minutes to brown slightly. Spoon potatoes over spinach. Add salt, pepper to taste.

Yield: Serves 2.

Approximate nutritional analysis per serving: 197 calories, 33 percent of calories from fat), 7.3 grams fat (1 gram saturated), no cholesterol, 5.1 grams protein, 30.2 grams carbohydrates, 4.4 grams fiber, 59 milligrams sodium.
