Here’s something to grill beyond hamburgers.

Bacon-Wrapped Chicken

2 pounds boneless, skinless chicken breast, cut into 16 2-ounce cubes

1½ tablespoons kosher salt

1/3 cup lemon juice

3 tablespoons red wine

1/3 cup olive oil

1 tablespoon fresh thyme

½ tablespoon fresh rosemary

1/8 teaspoon ground cumin

16 thin slices bacon (apple wood-smoked preferred)

16 leaves fresh sage

Fresh cracked pepper

Season chicken with salt. Soak 8 bamboo skewers in water. Make marinade by combining lemon juice, wine in large bowl. Slowly whisk in oil. Mix in thyme, rosemary, cumin. Place chicken in marinade for a few minutes. Place bacon flat on clean surface. Put cube of chicken on top of each slice. Place sage leaf on top of each cube. Wrap chicken in bacon. Sprinkle pepper on bacon. Slide 2 bacon-wrapped cubes onto each skewer. Place on heated charcoal grill. Cook, turning often, until bacon is crisp, chicken is cooked to 165 degrees.

Yield: Serves 8.
