This would be an excellent side to any grilled meat.
Green Rice
5 ounces washed, ready-to-eat fresh spinach
½ cup quick-cooking brown rice
1 cup fresh bean sprouts
1 cup water
2 teaspoons sesame oil
2 scallions, sliced
Salt and fresh ground black pepper
Place spinach, rice, bean sprouts , water in large saucepan. Bring water to boil. Cover with lid. Lower heat to medium. Simmer 30 minutes or according to rice package instructions. Water should be absorbed, rice cooked through. If rice is cooked and there is liquid in pan, remove lid, boil to evaporate liquid. Stir in oil, scallions. Add salt, pepper to taste. Place on dinner plate.
Yield: Serves 2.
Approximate nutritional analysis per serving: 171 calories, 6 grams fat (1 gram saturated), no cholesterol, 6 grams protein, 27 grams carbohydrates, 4 grams fiber, 72 milligrams sodium.
