Here’s an alternative to a favorite pork recipe.

Pulled Chicken Sliders

¾ pound boneless, skinless chicken thighs

2 teaspoons canola oil

1 cup sliced carrots

1 cup frozen diced onion

1 cinnamon stick

1 star anise

1 orange, cut into wedges

1 cup red wine

1 tablespoon sugar

4 minislider or burger rolls

Remove chicken fat. Heat oil in nonstick skillet over medium-high heat. Brown chicken 2 minutes on each side. Add carrots, onion, cinnamon stick, star anise, orange, wine, sugar. Bring to simmer. Cover. Cook 15 minutes. Remove meat to plate with slotted spoon. Place colander over bowl. Pour in pan liquid, pressing solids with back of spoon to extract liquid. Use 2 forks to shred chicken. Divide meat among 4 rolls. Spoon liquid over sliders.

Yield: Serves 2.

Approximate nutritional analysis per serving: 569 calories, 14 grams fat (3 grams saturated), 138 milligrams cholesterol, 41 grams protein, 45 grams carbohydrates, 1.5 grams fiber, 494 milligrams sodium.
