Jazz up your next grilling entree with this jerk spice mix.

Jamaican-Style Marinade

½ cup orange juice

¼ cup lime or lemon juice

2 teaspoons ground thyme

½ teaspoon pepper

2 tablespoons dark brown sugar

2 teaspoons ground allspice

1 teaspoon nutmeg

2 Scotch bonnet peppers, or more to taste, chopped

1/3 cup soy sauce

2 tablespoon vegetable oil

1 medium onion, chopped

2 garlic cloves, pressed and minced

1 teaspoon grated fresh ginger

Combine ingredients in food processor. Pulse to puree.

Yield: About 1 cup. (This is enough to marinate up to 2 pounds of meat and can be stored in refrigerator for a week.)

Approximate nutritional analysis per tablespoon: 27 calories, 56 percent of calories from fat, 1.7 grams fat (no saturated), no cholesterol, no protein, 3 grams carbohydrates, no fiber, 276 milligrams cholesterol.
