An Asian-Style sesame oil dresses up this spring favorite.

Orange Sesame Asparagus Salad

4 to 6 cups Boston Bibb lettuce

1 orange

1 pound asparagus, trimmed

¼ cup orange juice

2 teaspoons grated, peeled gingerroot

1½ teaspoons sesame oil

1 tablespoon toasted sesame seeds

Preheat oven to 425 degrees. Divide lettuce between 4 plates. Zest orange and reserve zest. Segment orange, divide evenly onto plates. Place asparagus on baking sheet. Spray generously with nonstick spray. Roast asparagus 12 to 15 minutes, until tender. Divide evenly on top of lettuce. Whisk together orange juice, gingerroot, sesame oil, reserved zest. Drizzle over salads, sprinkle evenly with sesame seeds.

Yield: Serves 4.

Approximate nutritional analysis per serving: 83 calories, 3 grams fat (trace saturated), no cholesterol, 11 grams carbohydrates, 3 grams protein, 6 milligrams sodium, 3 grams dietary fiber.
