This recipe is from Alice Medrich’s “Chewy, Gooey, Crispy, Crunchy, Melt-in-Your-Mouth Cookies” (Artisan, $25.95).

Rocky Road Bars

7 tablespoons unsalted butter, melted

1½ cups fine graham cracker crumbs

¼ cup sugar

1 cup walnut halves

12 marshmallows, quartered

1 cup milk chocolate or semisweet chocolate chips

Preheat oven to 350 degrees. Position racks in upper, lower thirds of oven. Line bottom, sides of 8-inch square pan with foil. Mix butter, cracker crumbs, sugar until moist. Turn mixture into pan, spread evenly, pressing firmly over bottom to form crust. Scatter half of nuts over crust. Bake on lower rack for 10 minutes. Remove from oven, scatter marshmallows, chocolate chips, remaining nuts evenly over crust. Turn temperature to 375 degrees, return pan to oven on upper rack, bake until marshmallows are golden brown, merged with one another. Set on rack to cool. Lift ends of foil liner, transfer bars to cutting board. Cut into bars.

Yield: 16 2-inch bars.
