This recipe from “Maida Heatter’s Cakes” would be fit for The King.

Pecan-Peanut Butter Banana Bread

1 cup each sifted all-purpose and whole-wheat flour

1 teaspoon baking soda

½ teaspoon salt

¼ teaspoon nutmeg

¾ stick unsalted butter

½ cup smooth peanut butter

1 cup dark brown sugar

2 eggs

2 to 3 large bananas (1 cup)

1½ cups pecan halves, toasted

Adjust rack one-third up from bottom of oven. Preheat oven to 375 degrees. Butter 2 8-by-4-by-2-inch pans. Dust with dry bread crumbs. Sift together flours, baking soda, salt, nutmeg. In electric mixer bowl, beat butter until softened. Add peanut butter. Beat to mix. Beat in sugar, then eggs, one at a time. Coarsely mash bananas. Add to bowl. Add dry ingredients. Beat until incorporated. Pour half of batter into each pan. Smooth tops. Bake at 375 degrees for 15 minutes. Reduce temperature to 350 degrees. Bake for 35 to 40 minutes. Cool 10 minutes in pan before removing.

Yield: 2 small loaves.
