CHEF JEFF — ONE BYTE AT A TIME: Sweet-Potato Salad

If you like sweet potato fries, you’ll love this recipe.

Sweet-Potato Salad

3 sweet potatoes, peeled and sliced ¼-inch thick

2 tablespoons vegetable oil

Salt

2 bunches scallions, washed and trimmed at both ends

2 tablespoons finely chopped fresh cilantro

2 tablespoons unsalted butter

2 teaspoons lime juice

½ teaspoon ground cumin

Preheat gas grill to high or light charcoal. Place potatoes on baking sheet, toss with vegetable oil, sprinkle with salt. Do same with scallions, keeping them in loose bunch. While grill heats, clean, oil grate. Turn heat to medium. Place scallions on grill in bunch. Cook, turning once, until softened, lightly charred in places. Remove to baking sheet. Place potatoes on grill. Cook, turning once, until they have grill marks on both sides, are cooked through. Transfer to baking sheet. Coarsely chop scallions. Place in bowl, along with potatoes. Add cilantro, butter, lime juice, cumin. Toss to coat. Season with salt if necessary. Serve.

Yield: Serves 4.
