This recipe comes close to a Red Lobster favorite.
Cheddar Bay Biscuits
2 cups all-purpose flour
½ teaspoon salt
4 teaspoons baking powder
3 tablespoons confectioners’ sugar
½ cup shortening or softened butter or margarine
2/3 cup cold milk
8 ounces shredded Cheddar cheese
1 stick butter or margarine
1 teaspoon finely minced garlic
¼ cup minced fresh parsley
Heat oven to 450 degrees. Mix flour, salt, baking powder, confectioners’ sugar in bowl. Cut in shortening with pastry blender until mixture looks like small peas. Stir in milk just until dough cleans sides of bowl. Stir in cheese. Place butter, garlic in 9-by-13-inch pan; place in oven until butter melts, garlic is fragrant. Remove from oven. Stir in parsley. Use about ¼ cup dough to form ball. Roll in butter mixture; arrange in pan. Repeat with remaining dough. Pat top down so bottom is flat. Bake about 10 minutes, until golden. Spoon remaining butter on top. Serve.
Yield: 12 biscuits.
