CHEF JEFF — ONE BYTE AT A TIME: Citrus Rum-Glazed Mahi-Mahi

This seafood entree is popular at a well-known national restaurant chain.

Citrus Rum-Glazed Mahi-Mahi

3 teaspoons olive oil, divided

1 teaspoon chopped garlic

¼ cup Asian-style sweet chili sauce

¼ cup rum (regular or dark)

½ cup orange marmalade

4 skinless mahi-mahi fillets

Salt and pepper to taste

2 cups cooked white rice

4 orange slices

¼ cup minced cilantro

In saucepan over medium heat, saute 1 teaspoon of oil, garlic 3 to 5 minutes. Add rum, chili sauce, marmalade. Stir until marmalade melts, syrup forms. Remove from heat. Season with salt, pepper. Heat 2 teaspoons oil in nonstick pan over medium-high heat. Season fish. Sear until crust forms. Turn fish, reduce heat, cook to desired doneness. Put rice on 4 plates. Top with mahi, orange slice, glaze, cilantro.

Yield: Serves 4.

Approximate nutritional analysis per serving: 376 calories, 4.4 grams fat, 83 milligrams cholesterol, 24 grams protein, 52 grams carbohydrates, 1.5 grams fiber, 325 milligrams sodium.
