A microwave can come in handy when you need breakfast in a hurry.

Brunch Eggs

4 slices toast, buttered then cubed

4 eggs, beaten

1 cup milk

Dash of Worcestershire or hot sauce

Salt and pepper to taste

10 ounces grated cheese, such as Cheddar or Monterey jack

1½ cups cooked meat (cubed ham, shredded chicken, crumbled sausage, etc.)

½ cup diced, cooked vegetables such as chilies, roasted peppers, asparagus tips, etc. (optional)

Combine ingredients in bowl. Pour into 9-inch round glass baking dish that has been generously coated with vegetable oil spray. Cover tightly with plastic wrap. Refrigerate overnight. Microwave casserole on 50 percent power for 5 minutes. Remove and discard plastic. Continue cooking casserole at 50 percent power, checking at 5 minute intervals, until center is set, about 10 minutes. Let stand a few minutes before slicing.

Yield: Serves 8.
