If you’re looking to fix a meal for just yourself, try this recipe.

Cooking-for-One Pasta

¼ pound dry pasta, preferably penne

1 tablespoon olive oil

1 clove garlic, minced

2 cups fresh spinach

¼ cup roasted red peppers, coarsely chopped

1 small jar marinated artichoke hearts, drained and coarsely chopped

2 ounces goat cheese, cut into chunks

Kosher salt and freshly ground pepper, to taste

Cook pasta in salted water until al dente; drain. Meanwhile, heat olive oil in a large skillet over moderate heat. Add garlic and cook for about 30 seconds. Add spinach. Cook for a couple of minutes, until wilted. Add artichokes, cheese, salt, and pepper and heat for about 1 minute. Serve over pasta.

Yield: Serves 1.

Approximate nutritional analysis per serving: 735 calories, 45 grams fat (18 grams saturated), 60 milligrams cholesterol, 27 grams protein, 53 grams carbohydrates, 4 grams fiber, 469 milligrams sodium.
