Ropa vieja, a traditional Cuban dish, doesn’t need to take hours to make.

Flank Steak in Tomato Sauce

½ pound flank steak

Vegetable oil spray

Salt and freshly ground black pepper

1 cup sliced onion

1 cup sliced carrots

2 teaspoons minced garlic, crushed

½ medium green pepper, sliced (about 1 cup)

1¾ cup can whole tomatoes with sauce

1 teaspoon dried oregano

½ cup sliced pimentos in water

Cut meat into paper-thin slices. Heat nonstick skillet over medium-high heat. Spray with vegetable oil. Saute meat 2 minutes. Remove to plate. Sprinkle with salt, pepper to taste. In same pan, saute onion, carrots, garlic, green pepper 5 minutes. Lower heat to medium. Add tomatoes, oregano. Break up tomatoes with spoon. Simmer 5 minutes. Return meat to pan. Mix well. Add pimentos, salt, pepper to taste. Cook 1 minute. Serve over rice.

Yield: Serves 2.
