This tasty dessert recipe is all about texture and versatility.

Velvet Loaf Cake

2 cups flour

1 teaspoon baking powder

½ teaspoon salt

½ cup (1 stick) butter or margarine, sliced

1 cup sugar

3 eggs

1 teaspoon orange or lemon extract

½ cup milk

Stir flour, baking powder, salt together. In another bowl, beat butter, sugar until light, fluffy. Beat in eggs, extract. Mix in some of flour mixture, then some of milk, until you’ve used it up. Bake in 9-inch loaf pan sprayed with vegetable oil. Bake an hour at 325 degrees, or until toothpick inserted comes out clean.

Yield: Serves 8.

Approximate nutritional analysis per serving: 348 calories, 36 percent of calories from fat, 13.8 grams fat (8.1 grams saturated), 97.6 milligrams cholesterol, 6.2 grams protein, 50 grams carbohydrates, 0.8 grams fiber, 306 milligrams sodium.
