CHEF JEFF — ONE BYTE AT A TIME: Garlic Chili Cheese Sauce

Some foods such as open-faced sandwiches beg for a good topping.

Garlic Chili Cheese Sauce

¼ cup olive oil

½ cup finely chopped onion

2 tablespoons minced garlic

2 tablespoons flour

1 cup light cream

4¼-ounce tin chopped green chilies

1 to 2 teaspoons chipotle sauce (optional)

1½ cups grated Jarlsberg cheese

In saucepan, heat olive oil. Saute onion with garlic until onion is translucent and garlic begins to brown. Add flour. Cook, stirring on low heat, 2 minutes. Remove from heat. Stir in cream until smooth before adding chilies. For smoky flavor, add chipotle sauce. Stir in ¼ cup warm water for thinner sauce. Blend well. Return to low heat, stirring. When thoroughly heated, stir in cheese until melted. (Sauce can be made ahead and reheated in microwave.) Serve over open-face sandwich of roast turkey and ham or roast sliced pork on toasted sourdough or country bread.

Yield: Serves 4.
