Sometimes, surprise ingredients such as this salsa staple can turn out to be the star of a dish.

Tomatillo Hash with Sausage

3 links Italian turkey sausage

1 tablespoon olive oil, or more as needed

1 onion, chopped

1 each, seeded, chopped: red bell pepper, poblano pepper

¼ teaspoon salt

2 tomatillos, husked, chopped

½ cup white wine or chicken broth

2 cups cooked brown rice, heated

Chopped fresh cilantro (optional)

Squeeze sausage out of casings, forming into 1-inch balls. Heat heavy skillet over medium-high heat; add oil, sausage. Cook sausage, turning to cook all sides, until browned. Remove from skillet. Stir in onion, peppers, salt. Add more oil if needed. Cook until beginning to soften. Stir in tomatillos; cook until soften. Add wine. Return sausage to skillet; let simmer until heated through. Serve over rice; top with cilantro.

Yield: Serves 3.
