CHEF JEFF — ONE BYTE AT A TIME: Creamy Coleslaw

This side dish is a staple at fish fries, picnics and backyard barbecues.

This side dish is a staple at fish fries, picnics and backyard barbecues.

Creamy Coleslaw

1 cup reduced-fat mayonnaise

¼ cup cider vinegar

2 tablespoons sugar

1 cup reduced-fat sour cream

½ cup minced onion

8 cups green or savoy cabbage, finely shredded

4 cups red cabbage, shredded

1 cup shredded carrots

¼ cup minced green pepper

1 to 2 tablespoons celery seeds

Salt and pepper to taste

In large bowl, whisk together mayonnaise, cider vinegar, sugar, sour cream. Add onion, cabbage, carrots, green pepper, celery seeds. Fold gently to mix all ingredients. Season with salt and pepper. Refrigerate 1 to 2 hours.

Yield: Serves 10.

Approximate nutritional analysis per serving: 129 calories, 6 grams fat (3 grams saturated), 17 grams carbohydrates, 3 grams protein, 250 milligrams sodium, 12 milligrams cholesterol, 1 gram fiber.
