CHEF JEFF — ONE BYTE AT A TIME: Steak Creole

This recipe turns an inexpensive cut of meat into a tasty, foolproof and budget-friendly dish.

This recipe turns an inexpensive cut of meat into a tasty, foolproof and budget-friendly dish.

Steak Creole

4 lean cubed steaks (about 1½ pounds total)

1 medium green pepper, diced

1 medium onion, diced

1 28-ounce can chopped tomatoes

1 tablespoon sugar

1 tablespoon apple cider vinegar

½ teaspoon dry mustard

1/2 teaspoon chili powder

Salt and pepper to taste

Season the individual cubed steaks on both sides with salt and pepper. Quickly brown both sides in a hot skillet. Remove steaks from pan. Set aside. Add onions and peppers to pan and saute until tender. Stir in remaining ingredients and return steaks to pan. Cover and simmer for 1 hour or until steaks are tender.

Yield: Serves 4.
