CHEF JEFF — ONE BYTE AT A TIME: Wacky Chocolate Cake

Here is a fuss-free recipe.

By: Herald Staff Report,

Here is a fuss-free recipe.

Wacky Chocolate Cake

1 cup milk

6 tablespoons unsalted butter, plus more for greasing pan

1½ cups flour

1/3 cup natural unsweetened cocoa

1 teaspoon baking soda

½ teaspoon salt

1 cup sugar

1 teaspoon vanilla extract

1 tablespoon white distilled or cider vinegar

Preheat oven to 375 degrees. Grease 9-inch round cake pan. Line with parchment (see note). Measure milk in microwavable cup. Cut up butter. Add to milk. Microwave until butter melts. Place flour, cocoa, baking soda and salt into sifter. Sift into bowl. Add sugar. Whisk to combine. Add vanilla and vinegar to butter-milk mixture. Add to dry ingredients. Whisk until everything is just combined and there are no lumps. Pour into pan. Bake until toothpick inserted in center comes out dry, 35 to 40 minutes.

Note: Place pan on parchment paper. Trace circle around bottom. With scissors, cut inside circle so parchment circle fits inside pan. Grease pan. Place circle inside pan. Press to bottom. Turn it over so greased side is up.
