Greek Walnut Cake

2 cups sifted flour

1½ cups sugar

1 tablespoon baking powder

1 teaspoon allspice

2 teaspoons cinnamon

1 cup ground walnuts

3 eggs

1 cup milk

1 teaspoon Champagne vinegar

1 cup extra-virgin olive oil

Heat oven to 350 degrees. In large bowl, whisk together flour, sugar, baking powder, allspice, cinnamon and walnuts. Mix eggs into dry ingredients, 1 at a time. Whisk in milk, vinegar and olive oil. Beat just until thoroughly combined. Transfer batter to greased 13-by-9-inch pan. Bake cake on center rack of oven until puffed and golden and a toothpick inserted comes out clean, 30 to 45 minutes. Place pan on rack to cool slightly before slicing on diagonal into diamond shapes.

Yield: Serves 16.

Approximate nutritional analysis per serving: 309 calories, 4 grams protein, 32 grams carbohydrates, 1 gram fiber, 19 grams fat, 41 milligrams cholesterol, 112 milligrams sodium.
