Mom’s Strawberry Pie
PIE CRUST:
18 graham crackers (1 cup)
¼ cup sugar
½ cup melted butter
FILLING:
1½ cups cold water
2 tablespoons cornstarch
1 3-ounce package sugar-free strawberry gelatin
3 tablespoons sugar
4 cups hulled, sliced strawberries
Crush crackers into bowl. Add sugar and butter. Mix well. Press mixture into buttered, 8-inch pie pan. Chill crust in refrigerator for 45 minutes. In saucepan, mix together water and cornstarch. Bring to boil, stirring constantly. Turn down heat to medium. Cook for about 2 minutes. Remove from heat. Add gelatin and sugar, mixing well until dissolved. Add strawberries; mix together well. Pour into graham cracker crust. Place in refrigerator until set (about 2 hours). If desired, serve with whipped topping.
Yield: Serves 8.
