Just about everyone loves a good casserole.
Potato Casserole
2 tablespoons stick butter or vegetable oil
1 small onion, sliced
2-pound bag of hash browns, partially thawed
1 can cream of chicken soup
1 cup (8 ounces) sour cream
2 cups Cheddar cheese, shredded, or 1 large jar of Cheese Whiz
Salt
Pepper
Garlic salt
Vegetable spray
Potato chips
Saute onion in butter or vegetable oil in large sauce pan. Add hash browns. Cook until lightly brown and soft. Add cream of chicken soup and sour cream to mixture and melt. Melt cheese into mixture. Add salt, pepper and garlic salt to taste.
Spray vegetable spray onto a 2-quart casserole dish, pour mixture into dish. Sprinkle with crushed potato chips.
Bake at 350 degrees for 45 to 60 minutes until lightly browned and bubbling.
