CHEF JEFF — ONE BYTE AT A TIME: Frito Pie

This would be a crowd favorite at any Super Bowl party.

Frito Pie

1 15-ounce can chili, without beans, or homemade chili)

1 bag of regular Fritos

½ pound or more Velveeta cheese, grated

Heat chili in pan. Rinse can with about ¼ can water and add to chili.

Spray 2-quart baking dish with cooking spray. Layer Fritos and grated cheese in baking dish. Pour half of the heated chili mixture over the Fritos and cheese. Repeat with another layer of Fritos and cheese and pour remainder of chili mixture on chips. Garnish with additional Fritos and cheese.

Bake in 350 degree oven until cheese melts and mixture is bubbly, about 15 minutes.

Serve with pinto beans.

Note: Some variations of this recipe call for chopped onion, canned tomatoes and other cheeses and spices.
