This relish can serve as a topping for many kinds of food.

This relish can serve as a topping for many kinds of food.

Texas Hot

1 large, ripe tomato, chopped

1 small onion, minced

1 green bell pepper, minced

1 jalapeno or other hot chile, seeded and minced

1½ tablespoons white vinegar

1 tablespoon sugar

¼ teaspoon salt

1/8 teaspoon pepper

Mix all ingredients with 1/3 cup water in a glass bowl or jar. Cover and chill until ready to serve with beans. Leftover sauce may be refrigerated up to 1 week.

Yield: Serves 10 (about 2½ cups)

Approximate nutritional analysis per serving: 13 calories, no calories from fat, no fat, no cholesterol, 0.3 grams protein, 3.3 grams carbohydrates, 0.5 grams fiber, 59 milligrams sodium.
