Start your morning off with one of these tasty morsels.
Bacon Cheese Breakfast Biscuits
1 pound bacon, cut into 1-inch pieces
3 cups buttermilk baking mix
2 tablespoons sugar
2/3 cup milk
3 tablespoons minced green bell pepper
1 tablespoon minced onion
½ cup crumbled Cheddar cheese
2 tablespoons butter, melted
Cook bacon in frying pan over medium heat until cooked through but not crisp. Place on paper towels. Whisk baking mix with sugar. Stir in milk until dough comes together. Stir in bacon, pepper, onion and cheese. Work dough as little as possible, adding more milk or baking mix as needed to produce a dough that forms ball but is not too sticky. On floured surface, roll out to thickness of 1 inch. Cut biscuits with 2-inch round cutter. Place with sides almost touching on greased cookie sheet. Refrigerate 10 minutes. Heat oven to 350 degrees. Bake biscuits until they begin to brown, 25 minutes. Brush with butter. Serve warm.
