Apple-Walnut Pork
1 cup uncooked brown rice
1 Granny Smith apple, peeled and diced
½ cup apple juice
¼ cup honey
½ cup chopped walnuts
1 pound cooked pork roast, shredded
Salt
Freshly ground black pepper
2 cups frozen green beans
In medium saucepan, bring 2½ cups of water to boil. Add rice; return to boil. Reduce heat to low, cover and simmer for 40 to 50 minutes, until all liquid is absorbed. Fluff rice with fork before serving. Combine apple, apple juice, honey and walnuts in large skillet. Saute over medium heat for 4 to 6 minutes, until juices reduce slightly. Stir shredded pork into sauce, simmering for 3 to 4 minutes or until heated through. Season to taste with salt and pepper. Cook green beans according to package directions. Serve pork with rice and green beans.
Yield: Serves 4.
