CHEF JEFF — ONE BYTE AT A TIME: ‘A.1.’ Meatloaf

A dash of a popular sauce gives this comfort food added taste.

‘A.1.’ Meatloaf

FOR MEATLOAF:

2 pounds ground beef

2 tablespoons A.1. Steak Sauce

2 teaspoons salt

1 cup dry bread crumbs

2 eggs

¾ cup milk

3 tablespoons parsley flakes

1 small onion, minced

¼ cup shredded carrot

FOR SAUCE:

2 tablespoons A.1. Steak Sauce

1 8-ounce can tomato sauce

In bowl, mix 2 tablespoons steak sauce and tomato sauce. In separate bowl, mix meatloaf ingredients with one-half of sauce mixture. Blend. Pat meatloaf into a 9-by-5-by-3-inch loaf pan. Spread remaining sauce mixture over top of meatloaf. Bake at 400 degrees for 1 hour.

Yield: Serves 8.

Approximate nutritional analysis per serving: 269 calories, 11 grams fat , 26 grams protein, 14 grams carbohydrates, 1 gram fiber, 960 milligrams sodium, 124 milligrams cholesterol.
