Don’t “mock” this recipe for its unusual ingredient.

Coco-Not Cookies

1 cup sugar

¼ cup butter, softened

1 teaspoon coconut extract

1 large egg

1 cup mashed potato flakes

1½ cups baking mix (such as Bisquick)

Heat oven to 375 degrees. Combine sugar and butter in large bowl; beat until light and fluffy. Add coconut extract and egg; blend well. Add potato flakes and biscuit mix; mix well.

Shape dough into ¾-inch balls. Place 2 inches apart on ungreased cookie sheet. Bake 12 to 14 minutes or until golden brown. Remove from cookie sheet and cool on wire rack.

Yield: 4 dozen cookies.

Approximate nutritional analysis per cookie: 45 calories, 30 percent of calories from fat, 1.5 grams fat (0.8 grams saturated, 0.3 grams monounsaturated), 6.9 milligrams cholesterol, 0.5 grams protein, 7.6 grams carbohydrates, 0.2 grams fiber, 55.8 milligrams sodium.
