This recipe is not just for vegetarians.
Speedy Cabbage Curry
3 tablespoons vegetable oil
1 inch fresh ginger, peeled and cut into narrow strips
1 teaspoon cumin seeds
½ teaspoon fenugreek
½ teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon curry powder
1 cup coconut milk
1 medium-small cabbage, quartered and cut into thin strips
2 tablespoons cilantro, chopped
Salt and fresh lime juice to taste
Heat oil in wok or frying pan ver medium heat. Add ginger, cumin, fenugreek, turmeric, coriander and curry powder. Stir spices. Add coconut milk. Bring mixture to a brisk simmer. Add cabbage. Turn up heat and cook, stirring occasionally, until cabbage is still crunchy and just done. Add salt and lime juice. Sprinkle with chopped cilantro.
Yield: Serves 4.
